Nicholas Machin, known to everyone as Colacho, was born in Lanzarote at a time when tourism was just a word and Playa Blanca was a sleepy fishing village.
At a very young age he started to work in the restaurant Casa Salvador from where his dedication
soon became his vocation. It wasn´t long before Colacho learned the mysteries of the kitchen
submerging himself in its secrets, always in pursuit of what was necessary to develop his own
concepts of gastronomic cuisine.
